Executive Chef Hueman Lam and Chef de Cuisine Dario Fiorino are pleased to showcase the very best of fresh local produce. Vintaged Bar + Grill prepares the majority of dishes on the grill, including entrees, mains and desserts. Meats are a key feature on the menu and have been carefully selected from around Australia and Queensland.
Beyond the grand façade of the iconic, Harry Seidler-designed Hilton Brisbane, ascend to the sixth floor, where dramatic down lights create a theatrical mood for stylish gatherings. Contemporary furnishings, clean lines and vivid colours reflect the energy and attention to detail that’s maintained in our bustling kitchen. Flames dance on the magnificent Open Grill as premium ingredients are prepared to perfection. Behind it, an illuminated, Himalayan rock salt wall is a striking backdrop to the dry aged meat cabinet, with its impressive array of fine cuts.
With our interior recently returned to its contemporary best by renowned Australian architect Mark Landini, our finishes and furnishings now create a spectacular exhibition of their own.
